• Appearance : Brownish with golden highlights, sometimes a little lighter. Its consistency is generally runny, although it can sometimes be a little thicker. The granulation is fine making it very creamy. When crystallisation occurs, it becomes very solid.
• Smell : The strong fragrance suggests the smell of freshly cut hay.
• Taste : The taste is always strong but can vary from one year to the next depending on the hillside where the hives are placed.
